Cilantro Pesto and Shrimp Pizza

With the rain, our herbs have taken off. Making dill pickles with all the dill, for example.
The cilantro is chest high. Last week my wife grabbed a bunch and made a pesto with it. Same as with basil, essentially, and it was fantastic. She made enough to fill a small container, and last week, and again this week we made a pizza with it, topped with shrimp.
The olive oil and thin crust work to create these incredible bubbles, which i let go for a while then slit with a knife to deflate. We end up with very thin crust, great crunch, and some great areas of browning (formerly the bubbles).
Good stuff. I recommend it.
I think she just substitutes cilantro for basil, but she may tweak it too. I don't have her "recipe", since she does it on the fly.

i really need to do some more. i have found that the trick is to just put it out and call it prosciutto.

ive found with some people you just have to tell them to leave the kitchen because they dont want to see what your doing next. my sisterinlaw (weightwatcher)freaked seeing sugar added to a brisket, most wont eat the creme fraiche after asking how i made it, they were fine until they saw the canning jar. whats the problem leaving dairy products out for a day or two on the fireplace mantel :laugh: demoulas said next thu they should have some duck in, hope they remember to order it before it gets too warm outfukahwee maineyou can lead a fish to water but you can not make him drink it

That looks incredible. Two questions before I give it a try:
Did you use cheese? I don't see any. I guess with cilantro pesto it's probably great with some grated parmesan if that's not already in the pesto.
Did you precook the shrimp or did you use fresh uncooked shrimp and the heat while cooking the pizza was enough? I'm thinking of substituting with scallops, which I like even better, but some thing--not sure whether to precook first (safer) or if this would end up drying them out too much. -

not sure. i don't think so. shrimp was small. if you do the scallops whole, and they are large, you might want to par cook them. make sure they are dry, or they will exude a ton of watered egli avea del cul fatto trombetta -Dante
