Had some friends drop over and they gave me about four pounds of fresh string beans out of their garden. Now, what would be a great way of having these on the egg?

Hi Phil,
I have never done this on the egg but I have my own recipe for green beans that even the kids will like.
Take equal parts pearl onions (frozen food section at supermarket) and caramelize them in plenty of butter. Mushrooms, I usually quarter them vertically, that have been caramelized in more butter, they will soak it up like a sponge. And green beans cut into 1" to 1.5" pieces and steamed till almost half cooked. This can be done ahead of time.
In a fry pan combine the caramelized onions, caramelized mushrooms and partially cooked beans. Make sure there is at least a couple tablespoons of melted butter in bottom of pan and bring the heat up to a good simmer. Depending on how many beans/onions/mushrooms that you are doing add honey and vinegar (apple cider or rice) at a two to one ratio, thats two tablespoons honey to each tablespoon of vinegar. Add 1/4 cup slivered almonds, again depending on how much you are making. Stir over a good amount of heat to finish cooking the beans and to reduce liquids to a glaze. Salt and pepper to taste.
I know it sounds like a lot of work and admittedly it is not instant but it is worth the effort. Everyone loves them. It is a hard recipe to write as it is all in ratios dependent on how many people you have to serve.

FRESH green beans.... OH Man... I need to live someplace different..... ours are about 4 inches high :S we do have yellow squash about 1 inch long.......

If you have a wok then wok 'em. I love them that way. I do a spicy Sezchuan style green bean stir fry.
Add onion, garlic, ginger and hot pepper flake to a hot oiled wok. I use peanut oil with just a few small splashed of sesame oil for flavor. Wok those until starting they soften. Then add the green beans and wok until they start to show slight charring. After that add 1/8 cup of soy with 3 tablespoons of sugar dissolved in it. Add a little water if needed. Finish with a little cornstarch in cold water if you want a slight "glaze" on them. -
Chris that sounds really really good!! if my beans ever do anything I will have to try that. right now they are 3.00 a pound in the store gggrrrr.....

Man oh man would I like to get my hands on 4 lb of fresh green beans.
I'd make them in the DO: add potatoes, onions, cut up ham, water, salt and pepper to tast (seven bean seasoning is very good). It's that simple but that great of a dish - family favorite. -
Roasted Green Beans. I haven't done these on the egg but think a little smoke would be a good thing.
Prep your beans, toss with olive oil, and spread on a baking sheet. Make sure they fit on one layer. Sprinkle with salt and pepper (or maybe a DP rub). Cook at 400 for about 20 minutes. Flip them partway through. They will get kind of brown and shriveled. They are fantastic.

Another thing you can do it you have a wok or frying pan is over medium heat saute 2 cloves of chopped garlic in EVOO, add 1 lb beans that have been cut in 1 inch pieces. Saute this for a minute or two the add the juice of 1/2 or 1 lemon and some salt and continue to saute until the beans are the way you like them.
