Finished the ribs; cooked 3 hrs then foiled for 1.5 hrs; unfoiled and finished for another 1.5 hours with bbq sauce. Tried a whole head of cauliflower - cored the center just enough to keep it together; filled with crushed garlic and butter, drizzled with evoo and sprinkled with seasoned salt and pepper. Steamed it in the foil for about an hour, then opened it up for 30 minutes. All was really good; the flavor of the cauliflower was exceptional. A successful first adventure I'd say!
