Rib Tips

I've always cooked baby back ribs but I'm going to try St.Louis cut ribs tomorrow. I had to buy spare ribs and cut off the tips to make them
St.Louis "style". What can I do with the rib tips that I removed? Are they worth cooking or should I throw 'em out?

Some like to make sausaage out of the meat on them, some just cook them like ribs, I like to make chile.

What is wrong with you? Cook them like normal, trim them up and use in baked beans.

Let's look at this another way.....if you had left the slab whole, you would have eaten the skirt and the strip. So, sure cook it. I do clean the trim up a little, and then cut the skirt into 3 or 4 pieces. The strip might make it 2 or 3 hours before getting snacked on.

I gotta' try those, can't believe I haven't yet. I am still trying to perfect Bbacks. DO you cook 'em same temp as BB's but longer? How much longer?
