Tomatoes are starting to get ripe and we really like these pies. You can play with the recipe adding shrimp, basil or just about anything.

Hi YB,
Those look wonderful! I tried to interest my family in Tomato Pie years ago and didn't have much luck. They were not very open to new ideas when it came to thier diet. :(
Like you say, that would be a fun recipe to play with. I was thinking of layering mozzarella and fresh basil with the tomato's and drizzling a little reduced balsamic vinegar over everything as you put it together and top with Italian seasoned bread crumbs dotted with butter. Might want to seed the tomato's to get rid of some of the water.
LOL, I'm out of here. I just made myself hungry and it's lunch time.

That sounds good...I lay the sliced tomatoes on paper towels to drain them also.

Hey Larry, love the recipe and your blender! Is it an original Oster Beehive or one of retro's they came out with later? I have an original that's very similar. Sucker sounds like a jet engine when you fire it up! I guess people didn't worry too much about hearing loss back then! Mark
