dried 2 days, then cooked last night, unwrapped and sliced some sage this a.m.

despite some clear leakage last evening, this morning package was dry and Sage BBB very good--
suprisingly more subtle than hoped, but delish non the less

    DOW....Looks excellent!!! Great job, and nicely done!! Did you find the drying before the smoke made a difference?? Honestly...want your opinion on this! Thanks!!

    We did some summer sausage today...lol...we seem to do our cured items on the same days! LOL!

  • :lol: can't really tell about the drying, yet. had not done this cut before, but know that I don't have to let the timing run my schedule (what a relief!) B)
    still, surprised with the clear "juice" during the cook--what with virtually a drop or two on the cookie sheet with meat on a raised grid for 2 days... :huh: but the foil package on the big one was dry as a bone this a.m., so maybe the extra moisture came from not letting it dwell, as discussed last evening, Michelle... :)
    anyway, I'm more than satisfied with this cook, especially since have planned to give some to the man helping with the pool :lol:
