LBGE busted out of bondage--again...so Ku wheeled her to protected area (from sandblasting) at gate and I proceeded to start chuckie

1:15 p 250 dome 147 meat ahh! plateau
2 p 290 dome 151 meat wrapped in foil,
added 3 oz. beef broth
2:20 p 320 dome 159 meat
3 p 320 dome 179 meat
??? goal: 185 meat, shut down LBGE and dwell 2 hours???
( usually dwell instead of wrapping foiled in towels, etc.) does 185 sound appropriate for shut down???

I've only cooked one and it was disaster. So Svetlana and I are going to have a White Russian. :woohoo:
Seriously, I would have foiled around the 165 mark and pulled at 200+ for shredded beef. Mine was so tough.

DOW...I have never done one on the Egg, I always use them for pot roast. I would simply give it the fork test...I have a feeling 185* isn't high enough to break down the connective tissues. But just a guess here.

I had new, real cheap internal digital thermometer set for 165 to foil, but after 4 hours on a 5#/2 chunk pieces, didn't want to dry it outlike the 2 briskets have been
, so foiled at 151 internal--low and behold, an hour and fifteen minutes later, the internal temp is 185!!! and the remote gave me a "real" alarm :silly: (had several alien alarms go off :unsure: )
will keep an eye on temp; still foiled in egg; temp usually stays up for a few hours---this $39.99 on sale for $19.99 Acurite wireless is working AOK--and if the dog gets it, will average out OK (Thermapen $80, Acurite $20 = $50 each.... :side: ) -

Thirdeye's blog recommended 185 internal for "slicing" chuck...it is all new to me :silly:
There are actually 2 pieces, 1 about 1/3 size of the other (5# total), but they were smoked with just a little space inbetween and wrapped together...
been 20 minutes since I shut the vents--dome 280, meat 195 :woohoo: -
