I did the Cobia today and it turned out great. Marinaded in mixture of lime juice and zest, cilantro, olive oil, salt, pepper and diced jalpeno for 20 min. Cooked direct at 400 and finished with remainder of mixture spooned over fish.

I only had Jack Daniels pellets so tried that for smoke. Worked ok.

Started with a dozen raw oysters during cook.

Pretty good Wednesday meal.

Thanks for the help on cooking advice.

Looks great Otis! I love Cobia, aka Lemonfish. Good firmness and mild/medium flavor. I like the marinade thoughts...not too many flavors and not too long. Good call!

what fish did you get? Is it corbina? I have caught them in Baja (along with corvina) surf fishing but haven't seen them available commercially in NorCal.

Would love to get them...Great tacos, especially when the surf is firing.

p.s. if you ever catch a corVina, don't go grabbing for the lure, they gots TEETH like a lingcod
