Well tonight was a rousing success.
Spatchcock chicken as per so many of the postings here as well as Crash Hot Potatoes. 375 indirect with applewood for smoke.
Raw chicken with Macormicks Chicken Rub
The new two tier setup.

Doug, this looks great. Spatchcock chicken is one of the recipes I have read alot about but haven't tried yet. Sounds like a good idea for this weekend.

They are grids for the Convection Microwave we had in Malaysia. Not particularly replacable.

It was a rack set that came with a microwave convection oven. Not particularly replacable, but work well and fit the egg quite nice. Little ceramic caps on the legs and little ledges above the legs on each level to hold the next level.

Some parts from an old microwave that found a new life. Nice when that happens. Like Beli's (I think) plant stand egg holder.

The recipe says 20 to 25 at 450 but I find temp and times are quite flexible. Last night at 375 for 1 hour worked fine. Great smoke flavour. But they're really good even in the oven.
