Favorite Cajun Seasoning???

I plan on grilling some shrimp later in the week and was wondering what everyone's favorite cajun seasoning was (Store bought or homemade).

Tony Chachera??? is good. Here are several choices.

Tony Chachere's is probably the most commonly used and it is uncommonly good. It is also sold in most stores.
But there are many others around and thousands of recipes to make your own. We still use some given to us by Chef Wil in Lafayette, Louisiana. It's good. Real good.
I say try Tony's first and then try to determine what it is lacking or overpowering. You may find it to be the answer to your prayers.

I prefer Paul Prudhommes blackened Redfish Magic....does not have to be used only for blackening. Makes a great seasoning as well. (Tony Chacheries is great, as well)

From personal experience, be careful with the Tony’s. It can get your shrimp real salty in a hurry. Other than that, it has a ton of great flavors. Good luck.

Tony's is fine for bringing you up to a base level of sorts, but don't depend on it for the "total effect". If you use Tony's as the total spicing for Cajun things, you'll find everything way too salty. I start with Tony's, then add extra garlic, pepper, Tabasco, etc, to bring the whole thing up to where you want it.

I like Paul Prudhomes for blackening...Tony C's for corn...and Slap Ya Mama for just about everything else...especially on SCRAMBLED EGGS - OMG!!
