Stuff It... Poblano's that is

Reading some posts yesterday and doing more testing on my medium I got to wanting some Stuffed Poblano Peppers.
Mixed some cream cheese, white and yellow cheddar cheese. The other wasa cream cheese with pepper jack cheese.
Both turned out great, I liked the additional kick of the pepper jack.
I am going to put some sausage in and another try some chopped up shrimp and or crab. Bacon sounds like it should be close by too.
Direct 350° for 45 minutes to 1 hour. Easy and fast.

Those look great Kent,I'm gonna have to try that.I love stuffed poblano's.Here's my last attemt

Those look great too.
If you like a softer poblano try wrapping in parchment paper then foil. I leave the top open like in my second picture. The smoke adds a lot to the flavor.
My first attempts were with just foil and the cheese seeped into all the little indents in the foil. And if one has old fillings the foil is a real treat. The parchment layer solves all the problems.
The cooked poblano has a great flavor as does jalapeno's.
I tried cubed chicken and let it cook in the mix and it didn't add much flavor. I think I need smoked cooked chicken.
I want to try doing several different mixes. Some on the list is adding beef, sausage, chicken (second try), shrimp or crab - one ingredient at a time.
AZRP's got me wondering about adding a small amount of crushed frito's to the mix. That might kick up the texture some.
A lot of things to try. It will be fun eating the samples.

I would do that in a heartbeat my friend.
I was thinking of mixing some minced jalapeno in the cheese mix. The pepper jack cream cheese was much better than the cheddar, but I like a little more kick.

Those look great GG! I picked up some super large jalapenos yesterday at the farmers market and I am wanting to do something similar but with some ground beef mixed in with the cheese. Alas today the BBacks got the nod :woohoo:
I too love sampling all of the trial and error off the Egg. Even the worst is pretty good. -

I want to try adding some different things I think ground beef (or chuck) would be a good choice. Maybe a mix of ground beef and sausage.
