Polder question

Can/should you leave the probe in the meat for the duration of a cook?
Were talking 250 dome roughly.
I need to cook a few pork butts this weekend.
I usually go in and out as I check the progress.
Can I leave it in?

Leave it in.Every time you open the dome you are letting heat to escape.

If you are talking about a probe on a wire, absolutley. That is what it is made for.
Not so for the handheld instant read type though, do not leave that one in the cooker.

What is the model number of the unit that you have? Some of their units if you get above 350 degrees you have to be careful of frying the probe. The newer units out now you have a better chance if the cook is under 400 degrees.
