Eggchiladas a pictorial

Been a few posts lately regarding enchiladas, thought I'd take some pics since I made them tonight. I lightly buttered a 9x13 glass baking dish and poured some enchilada sauce in half of it.

Dunk a tortilla in the sauce then fill with some shredded chicken, green chiles, and queso fresco.

Roll it up tightly.

Continue.

Until the dish is filled.

Sprinkle with scallions and sliced olives.

Now cover with a colby cheese.

Now pour enchilada sauce all over the cheese.

Place in the Egg at 350 dome, rotate 180 degrees after 30 minutes.

Pull after 40-60 minutes when it looks like this.

Let cool for 15 minutes then enjoy. -RP

looks good Randy. With all the talk between you and Rod the other day I made some with leftover pulled pork last night and Wendy said it was the best thing I have ever made. Not sure how to take that :ermm: but they were good. Thanks to you and Fidel.

Gonna try them in the oven this weekend, thanks to counseling from LC... If they work out, maybe I will try on the egg next weekend...

The most frustrating thing to me is the enchilada sauce itself. I think I've tried just about every kind of canned sauce that there is available in SoCal, and I don't really like any of them (Hatch Mild red is the best to my taste buds - but it still isn't what I'm after)
I've tried several receipes from scratch with various dried chile pods - all were mediocre at best.
Oh well, one of these days...............South SLO County -
I didn't care for Hatch, these were with Old El Paso. -RP
