T-Rex Method - Question

Newbie BGE owner with a newbie question. 
I'm going to do some Porterhouses using the T-Rex method tonight. When pulling them off the BGE after the 90-second sears on each side, do you tent them with foil when the Egg is cooling to 400 or just leave them on the plate uncovered for the 20 or so minutes before putting them on for the final cook?

i just leave them on the plate uncovered. i salt for the sear and add pepper during the rest, if they get overseared sometimes i splash on some balsamic during the plate rest as well, then back on at 400fukahwee maineyou can lead a fish to water but you can not make him drink it

I just set them right on the counter. The foil tent is not needed. Good luck and can't wait to see some pics.

definitely DO NOT tent them, you don't want them to continue cooking during the rest period. . .the idea is that the 'muscle' will rest and relax, making for a more tender steak as it won't tighten back up during the dwell period ... .beware though, during the 20 minute rest period, keep them out of reach of any other carnivores in the house. ..i have a big dog, and i've found the only safe place for resting the steaks for 20 minutes is on a plate inside my microwave oven (turned off of course). . .i figure if duffy can figure out a way to get into the closed microwave, above the stove to get to the steaks, she is deserving of them then!!

I'll just tent them in foil after the final cook ONLY and will be sure to keep them away from my Australian Cattle Dog who tends to be smarter and more clever than me...

All good advice. In addition I would recommend to not get married to the 90 seconds per side thing. I have had steaks that required 30 seconds a side and some that took 3 minutes. It all depends on your fire, meat and concentration of fat. Be sure to not 'over sear' the meat and turn it in to charcoal.
