Defrost butt question

My big plan is to low and slow 4, 5 or 6 butts (body count still ???) for our big open house in three weeks. I found a butcher who sells butts so I am good that way now. I bought and fr4oze one last weekend for a test drive. My question is for my trial butt this weekend how soon before would you suggest taking it out of the freezer and into the fridge?

    I would take it out tomorrow or Wednesday at the very latest.

    Honestly, it should be fine if you take it out now and keep it in the fridge until you cook it.

    Is there a sell-by or use-by date on it? Let that be your guide for refrigerator safety.

    sell by date plus five days is a decent rule of thumb, but his butt was frozen.

    sell by date could have been last year.

    if it's cryovac'd, he will have no reason to worry for a few days unless the cryovac is breached.

    Yea, but he said he bought and froze it last weekend.

    Personally, I would have taken it out already.

    The date on it says it was packed on the 22nd, it's in the fridge now. Is that too late, do I need to run water on it? I'm not planning on putting it on until Saturday night.

    There was no place to put it in the fridge on Saturday, it's always full after the big grocery run. It was an effort to fit it in there even today.

    It should thaw by Saturday. If not it is OK to put it on while still a little frozen in the center. It will cook just fine that way.
