Get some inexpensive ribs on sale and experiment with rubs and sauces. That rack and 3 different rubs applied and only 1 sauce. Mine are usually an experiment.

In my opinion the rub I fixed up was fine. My schedule pushed my cook around, so I took from the forum the recipe that fit the schedule not the food (9h at 225 grid) and the ribs were a little dry. Next time I'll go with 3-1-1. Not a mistake I will make again. At least not exactly the same mistake.

These went 4 hours at 260 grid (300 dome) and were cooked just like I was hoping for!
