My wife is from Phili and I joke that scrapple is the stuff that could not make it to sausage. It is a spiced pork product with a "unique" taste. Seems like alot from the area like it but that there are not many converts tasting it later in life.

That looks pretty tasty there Mark :woohoo: Except for the scrapple :pinch: I just can't get passed the texture of that stuff,even though I like the flavor of it :ohmy: I'll just stick with sausage

Looks good! Gotta try that soon, perhaps with sour dough bread. Do the yolks cook through or are they somewhat loose (like soft-boiled)? Saw Paula Deen do something similar and I think she called 'em 'One-Eyed Sailors'.

Rascal, I guess you could cook them loose or firm, to taste, the way she did it they were pretty firmed up, & very tastyhappy in the hut
