I did these at the Texasfest - recipe from Susan Egglane.
1 package cream cheese
1 cup sour cream
1 can Rotel original drained
Put mixture in frito and top with a shrimp (use the 40 to 50 count) and top with Old Bay.
At 375º to 400º they'll cook about 10 plus minutes until the shrimp is done.
The mixture will do about 100 fritos.LBGE Katy (Houston) TX -
If you want to try an Itlaian version mix 1 lb if Italian sausage with 1/2 lb Parmesan cheese and 1/2 cup marinara sauce. Stuff the Fritos or Tostitos and cook indirect at 350 until the sausage reaches at least 160 internal, about 20-25 minutes. Put a dollop of sour cream on each before serving. -RP
