Before i start i wanna make sure to thank Little Steven for the advice and idea for dinner! He even took time today to check up on me to make sure it was all going good! What a MAN!! Steve many many THANKS once again!
So for dinner i had 3 friends over and wanted to take the steak to another level,so what i did was this hot tubed the strip loin for a good hour, while that was being done i was reducing a beef broth, beer and some fresh ground pepper and thyme. And in the oven i had potatoes baking along with a nice bulb of garlic. So what i did was mashed the potatoes with the garlic and added some cream and mixed by hand. Then i fried some fresh mushrooms in butter to add to my reduction, and then sliced some red onions thinly dusted it with some corn starch and fried those in a pan with butter and olive oil t'ill nice and crispy! Time for the steaks nuked them at 700 for 2 minutes a side then rested then then back on the egg at 400 t'ill 135 internal on the therm.
All i can say is what a fest!! The guys kept raving about the reduction sauce steak and those fried onions WOW!!
here are some pics......
a shot of the reduction

steak enjoying a relaxing time in the (hot tub)!!

here they are well seasoned with my my new all time favorite rub Dirt!!

Jason's look when he saw the meal!!

Jason is really loving the rub's great taste!!

Oh yeah after that great meal just had to have a desert.......

Mikey,
Looks good! Next time a little more cornstarch on the onions. They should be almost like onion rings. Nice job on the demi glace.
