Cooked a copycat version of Outback Steakhouse Alice Springs Chicken that my lovely wife found today. She was really craving it so she wanted to give it a try. She had it already marinated when I got home and had the home made honey mustard ready. I seared 5 boneless skinless breast direct at about 500 for a few minutes per side. Then I threw on the plate setter and grid and finished them indirect. When they hit 165 internal I covered in bacon that I had fried and mushrooms that I had browned up after the bacon was done. Smothered in cheese and let melt. Pulled and enjoyed. We are very picky and we both agreed that these were about 97% of the way to being perfect. The only thing they had different was probably a thicker breast. They were great. Beats paying 40 bucks for the meal! :)
