Just curious as to what everyone is cooking and on how many of the three days. Wife is working most of the weekend but planning on doing some chicken pieces for her and her co-workers on Sunday. May do the friends and neighbor cookout on Monday. Golf the other days. :)

Whatever happened to Eggtucky?

On another note, I have to begin looking for alternative rubs with less salt according to the doc since bp is high. I guess it is a good thing that I am almost out of BB butt rub and I guess that means no more wings with Tony Cochere.

I will probably do some more Pork tenderloins Saturday and a smoked chicken Sunday and sides of course. I have to do BBQ for the sons HS Graduation beach house party, so I will do a brisket Monday to have burnt ends for the beans and a couple of Boston Butts for the Grad. :woohoo:

Dizzy Pig has some no salt rubs now.

I'm doing at least a brisket. Probably some chicken. Maybe some burgers and dogs.

Might get fancy and try that lamb recipe Jay posted too.

Big plans. We'll see what reality brings me.

I'm trying to think of what to cook as well. We always have a lot of local traveling to do. Go about 20 miles to one family gathering and then about 10 to another. We never have anything at our house as everyone hates to break the tradition. If I cook on a holiday its usually the day before to take with us, or late in the afternoon when we get home. I think I'm going with something rather quick myself. Chicken pieces does sound good and also the pork tenderloin. I'm burnt out on pulled pork. Is that possible? Ive had 3 or 4, 20 pound cooks last month. I still have yet to do a standing rib roast. That really makes my mouth water. Maybe thats what I'll do. Happy Egging!

No hangover yet either. You'd be proud of me. But I'm sure there will be one or two before I go back to work next week!

    I LOVE this holiday :)

Thanks to all who fought for our freedom first off....

I want to cook a beef brisket. My fool proof method to get a juicy, yummy beef brisket requires me to use a two level cook.

I set the guru to 225 degrees on the main grate, put the prepared brisket (yellow mustard and Dizzy Pig Cow Lick) on the main grate over the inverted plate setter holding a drip pan full of water, onions, garlic, celery, and rosemary (nice aeromatics).

Then I put on the raised grate and place a prepared boston butt directly over top of the brisket (yellow mustard, Dizzy Pig Tsunami Spin or Dust). This is the ULTIMATE baster for the brisket.

I usually have the meat on by 7pm, by 10 or 11am the next morning I am foiling everything up and letting it rest in a cooler covered with towels till early dinner (about 4pm). YUMM-O!
