Spring Chicken's watermelon rind recipe?

Spring chicken had some tasty grilled watermelon rind at the TX Eggfest. Other than the rind and the wrapped bacon, are there any other special ingredients?

    Appetizer, Bacon Wrapped, Watermelon Rinds, YB


    Ingredients
    1 jar (16 oz) pickled watermelon rind
    1 lb bacon



    Procedure:
    1 Wrap a pickled watermelon rind with bacon and secure with a toothpick.
    2 Cook at 350 on a fish/veggie grid on a raised grill until the bacon is done. You have to watch them closely and rotate them often, because with the high sugar content they burn easily.

    And YES to loco_engr's suggestion that there was rum involved. Rum was intook by the cook. It's the secret ingredient.

    no they pickle watermelon rinds and put them in jars.. they are more of a sweet flavor compared to pickles (cuecumbers)... kind of weird but really good ;)

    Thanks.I have had watermelon rind preserves (homemade by an old aunt) before but never have tried the pickles.

    In case you have soame spare time for the Chicken Ranch Ladies, You might wish to make your own watermelon rinds.

    Pickled, Watermelon

    Cherries add a little extra color to these watermelon pickles.


    INGREDIENTS:
    2 lbs watermelon rind
    1/4 cup pickling salt
    4 cups water
    2 cups sugar
    1 cup white vinegar
    1 Tbs broken stick cinnamon
    1 1/2 tsp whole cloves
    1/2 lemon, thinly sliced
    5 maraschino cherries, halved,optional




    Procedure:
    1 Trim the dark green and pink parts from watermelon rind. Cut rind in 1-inch cubes and measure 7 cups. Soak watermelon rind overnight in a mixture of the pickling salt and water. If it takes more to cover, use the same proportion salt to water.
    2 Next day, in a 6 to 8-quart kettle or Dutch oven, combine sugar, vinegar, cinnamon, whole cloves, and 1 cup water. Simmer mixture 10 minutes, then strain. Add drained watermelon rind, lemon slices, and maraschino cherries, if using. Simmer the mixture until watermelon rind is translucent. Fill hot half-pint jars with watermelon rind and syrup mixture, leaving 1/2-inch headspace. Adjust lids. Process in boiling water bath for 5 minutes.


    Yield: 2 1/2 pints.

    Yes, after you wrap the pickled watermelon rinds in bacon and secure with a tootpick you apply a LOT of Tony Chachere's Creole seasoning before putting on the grill.

    Not me, I was watching and sampling....the biggest kick was watching the expressions on those sampling without a clue what’s inside of the bacon. I could have been a Carne betting them to guess the mystery ingredient and would have won every bet. (Except for you veterans)
