Brisket prep--

I've got the recipe, got the brisket marinating, but am unsure of two things: should I use a platesetter with the V rack, and what kind of wood should I use for smoking the meat? Thanks!

    Definately want to do your brisket indirect! Yes, the platesetter is what we use. Don't necessarily need the V Rack...can do it direct on the grate, depending on the size of the brisket. As far as wood, it depends what you like! We have one cooking as we speak, we used a bit of mesquite. We have used Oak, Cherry, Guava... as I said, depends on your likes for smoke.
