Boston Butt - injection test

Now that I got the mistakes off my chest, here is the response to some who asked about the different injections.

I injected one of the butts with "Cajun Injector" Creole Butter and the other with "Tony Chachere's" Jalapeno Garlic. I plugged the injection holes with pieces of garlic, then rubbed them both with "Rebel Rub" - a local rub.

Final results. Jana and I tasted them both and we agreed there was a subtle hint of "heat" in the Jalapeno one, and she preferred it taste-wise.

But, once we added Carnivore sauce, the differences went away and that "hint"of heat was replaced with some serious heat. - LOVE IT ! :woohoo:

Next test will be one with and one without injecting at all. It sure is messy and if it doesn't add a lot of flavor and moisture, then I'm all for leaving that part off.

Also need to cut back on the rub - I think I am too liberal with it (heavily coat all sides) because we drink a lot of water during and after eating - too much salt!

Anyway, that's the results for those who asked.

BTW, brought the small one to work (with some Carnivore) - "You never bring us anything you cook".

    something to try if you like the jalapino injection is to not inject until the butts are plataueing. you loose a lot of the spicey flavor as it mellows during a long cook. also injecting during the plataue keeps the mess in the egg where it will burn itself off, not all over the counter. you may find that more of the injection also stays in the meat as its softer now, much easier to inject.

    Did you use the sauce as a dipping sauce or apply it to the butts at then end of the a few minutes before the end of the cook.

    I do not put BBQ sauce on the BB while cooking. I pull it, spritz it with Apple juice after being pulled (resisting a comment here, Bordello) and stir thoroughly.

    The Carnivore can either be added to each serving and stirred into the pulled pork or used as a dipping sauce.

    Sounds interesting. Makes sense. :)

    Do you take the butt off and inject it top and bottom, or just inject from the top and sides while it is in place in the EGG?

    mostly right in from the top and not as much comes out if your in the plataue. i dont do it all the time but sometimes i want something different. i use a vinegar sauce from elderwards cook. did it once in the house and never again. in the egg some drips out into the pan, no mess

    deep fried with cocktail sauce and its almost like cod, havent found another way to eat it as its oily and fishy if not fried. getting good with the fillet knife this year B)

    I liked the way you plugged the injection holes with garlic. Seems like at least half of the fluid I've injected spills out before cooking.

    Too salty rubs seem to be the rule, not the exception. I often cut commercial rubs with my own bulk additions, paprika, white pepper, etc. DP and a few others offer salt free rubs, so you can add just as much or as little as you like.

    I used the coarse Dizzy Dust on one butt a while back, but can't remember if it came out as salty as the Rebel Rub. I also may be putting it on too thick!

    I plan to more critically try the DP ones again, and maybe order some salt-free ones.

    Clark, your comment about taking some to work inspired me to respond--I brought work to my home with the help of my EGG. On Saturday, Holli and I hosted a little recruiting dinner at home. I'm hoping to bring a 4th pediatric surgeon to Mississippi--whats really neat is that Ken is trained in fetal surgery, and wants to establish a program here. We did a mountain of ribs to welcome Ken and his beautiful wife Kirstin along with his three children to the Magnolia State:

    Have heard compliments recently on your successful recruiting efforts.

    Last time I had to do anesthesia for a PDA on a 400 gram'er, we told them - NO MORE! There is a pediatric cardiac surgery facility just down the street. Giving anesthesia on 400-500 gram babies once every 20 years is not the best thing for me OR the baby! :) Case went well, but I was STRESSED OUT the whole time.

    Still trying to work on an Eggfest for central Mississippi. Maybe we need to just get several of us together for a cook one Saturday!

    Thanks Clark. I agree, PDA ligations are not the kind of case you want to do on a hobby basis--whether surgeon or anesthesiologist. Definitely tightens the sphincter to cardiac arrythmia inducing levels :pinch:

    They have a couple of parks with pavilions there. Only concern I have is transporting eggs. No way I am interested in trying to load up my large and carry it there. If I had a small or medium, it might be a different story (hint). :evil:

    I hope we can get a dealer interested, since an official eggfest will be supported by the Mothership with lots of eggs to use (and sell as demos). :woohoo:
