Smoked Fish Spread...

I smoked some whitefish on the large, and made some spread, went on a little boat ride and this is was our little snack:

Yes, Egret, I smoked it and made it myself, the same recipe I brought to the after-party in Ocala.

Wish you could have all been there today - It was a great day on the water in Florida!

    Bente, no, the recipe was not in the cookbook.

    Here is the recipe I used, from Ted Peter's Smoked Fish House, a St. Pete Beach restaurant, an institution here - just ask Big'un:

    Smoked fish - you name it, I have smoked flounder, mahi, cod, or any oily fish
    finely chopped onion
    finely chopped celery
    sweet pickle relish to taste
    Mayo (your favorite or homemade)
    S & P (today I used Adobo)

    All this to your particular taste.
    Serve on saltines or buttery crackers with Crystal Hot sauce (not too hot) or Tabasco.

    I make almost the same thing with my smoke Salmon and I use cream cheese instead of the mayo. Really quick, easy and yummy snack. That is after you catch, clean and smoke the fish. :)

    Looks like you had a great day of boating. That fish spresd looks delicious, and with the wine, what more could you ask for. You're really getting some beautiful weather there. It was raining and cold all day here in Wisconsin. :( I'm so jealous.

    Carwash Mike, I'm sure you can substitute salmon as Ripnem said. I haven't done that but it sounds good to me!

    Todd, If you look right in the bottom of this pic you will see I had some packets of Crystal on board, I wouldn't serve the spread without it!
