Green beans with Egret's ham bone

For easter, I slow cooked green beans with the ham bone I got from Egret. The smokey ham really made a sweet potlikker for dunking some of Crimsongator's jalepeno cornbread! Thanks Egret and Crimsongator.

This went along with a whole turkey I cooked on the egg after removing the backbone and breast bone. I left the thigh bones in this time.

Sorry, no after pictures of the turkey, my camera started acting up. Didn't get any pics of the adorable kids that enjoyed our Easter dinner either :( .

    wow i have never thought of spatchcocking a turkey in a pan before i have done it on a grate but your way looks like it would be more productive in gravey making... thanks ;) cornbread looks great also

    You now rip the bones out of everything you cook. do you have anger issues? Are we all still on for lunch Thursday and where?
  • Hey Al, it really makes stuff cook faster without all those bones! It was a 10 lb. turkey - I cooked it at 250 degrees for an hour, then cranked it up to 350 for another 35 or so minutes. You should try it sometime.

    I'm on for lunch. I thought you had a new BBQ place near Ybor.

    They seemed to have strange hours, not officially open. I will check on it Wednesday when I go to work.

  • Bente, this is the first time I have cooked a spatchcock bird in a pan. I did it because I was transporting it to my brothers house - he was already cooking a pork loin roast on his large egg. We took the pork out of the V rack and placed my pan with the turkey right in with the pork now on the grid, (the placesetter was in place). After the pork got to temp (140) degrees, that is when we opened the vent and got the temp in the egg to 350 to finish the bird.
