Are you asking about ABT's when you say stuffed peppers?

If so I mix softened cream cheese with Paul Newman's peach salsa and leftover pulled pork. I stuff the halved & cleaned jalapenos with the cream cheese mixture and wrap the jalapeno in bacon. I cook indirect at 350 until the bacon is crispy...easy peasy...

This is a terrific stuffed bell pepper recipe that Gfw has on his BBQ site. I have made it numerous times over the years. It's not exactly what you were looking for but it's sure worth the effort!

    Stuffed Green Peppers

    The Ingredients:

    3 large green bell peppers

    1 lb ground Italian sausage

1/2 can beer - your choice and do what you will with the rest!

    1/2 cup chopped onion

    1/2 cup water

    1/2 cup of shredded cheese

    1/3 cup minute rice

    1 8oz can tomato sauce

    1 tablespoon Worcestershire sauce

    1/2 teaspoon dried basil

    1/2 teaspoon dried oregano

    The method:

Slice the pepper lengthwise and remove the stems, seeds, and membranes. Place in boiling water for 3 minutes - remove and lightly salt the inside.

Cook onions and sausage until the meat is brown and the onions are tender. Add the balance of the ingredients except the cheese. Bring to a boil, cover and let simmer for about 20 minutes or until the rice is tender. Stir in 1/2 of the cheese. Place the peppers in a baking pan and fill the pepper shells with the mixture. Bake at 375 degrees for about 20 minutes. Add the balance of the cheese and let stand for 2-3 minutes.

Thanks, I think I'll just substitute pulled pork for the sausage (boatwoman won't eat sausage  ) and give it a try....looks great. B)
