One of my favorite Ocala recipes

Last night I tried my hand at a great recipe that I watched and sampled in Ocala. This is great party food.
Goya came out with a Chipotle Mojo that is an awesome marinade and seems to be made for bbq. I used the mojo to marinade boneless chicken thighs and grilled them direct along with some seeded serranos. You then slice up the chicken, and place it on a 10' wheat tortilla. Add serranos (they used in cilantro Ocala), shredded mexican cheese and a few teaspoons of sour cream.
The real magic comes here--you then wrap the wrap in foil and put it back on the egg for another 10 minutes and it all fuses together. Good stuff, especially with a drop of tabasco on each bite! Scott

I need to try those & soon, one of my wife's favorite foods is anything wrapped in a tortilla. About that Goya mojo, is that the sauce that is put on a lot of mexican type dishes, kind of dark red, almost purple in color? If so, I love that stuff too, a local supermarket I go to has a whole aisle of Goya products & I will have to look for that - have a great weekend too, Marc

I missed out on those in Ocala. :( It looks delicious and I need to check out my local mexican grocer for the Goya Chipotle marinade. I can just imagine that with
Pato's refried beans. If you haven't tried them they are incredible. What a meal that would be. -
this is what is bad about this forum.... I read this and had no idea what was for dinner and here it is. So one quick trip to Publix and the chix is soaking in the mojo and I am happy
I think the rice from last night will make a nice side dish for it too! -
