Perhaps you were not aware that Egret was a fisherman in a previous life. I hear he has even been to Alaska for the halibut.

    Halibut, Sour Cream, Egret

Here's one I use that's easy and excellent : Kelly,Actually, this came about when AlaskanC was asked about a good recipe for Halibut on the egg. She said she had not had any success cooking this per the conventional egg methods, i.e., direct/indirect raised grid/plate setter, rubs, etc. So, I suggested this recipe which can be done on the egg or in the oven. Actually, I did this once on my small BGE while I was grilling some Coho Salmon fillets on my large and it turned out awesome!! Here is the original recipe :

    INGREDIENTS:
    1 lb halibut fillets
    1 Cup Mayonnaise
1 cup white wine or sauterne
    1/2 Cup Sour Cream
    1 tsp salt
    1/4 Cup Onions, Chopped
    Paprika
    Fine bread crumbs

    Preparation:
1 Mix wine and salt and marinate halibut for at least 1 hour.
2 Drain fish on paper towel, dip both sides in bread crumbs, place in greased baking dish.
3 Mix together mayonnaise, sour cream, and onions, spread over fish and sprinkle top with remaining bread crumbs, and paprika.
4 Bake at 500 degrees for approximately 20 minutes or until fish flakes with a fork.

    And for the veggie side.

Beans, Vidalia Onion W/Peppers, Mrs. Puj

A colorful vegetable stir fry with a little kick.

    Ingredients:
    1 lb Green Beans
    1/2 Medium Green Pepper
    1/2 Medium Red Pepper
    1/2 Medium Yellow Pepper
    1/2 Medium Purple Pepper
    1/2 Small Vidalia Onion
    2 Tbs Olive Oil
    2 Tbs Red Wine Vinegar
2 tsp Crushed Red Pepper Flakes

    Preparation Directions:
1 Slice the peppers into thin strips.
    2 Chop the vidalia onion.
3 Steam the green beans for 9 minutes and cool. Green beans can be steamed up to 24 hours prior to the stir fry. Just keep them refrigerated.
    Cooking Directions:
1 This recipe is cooked in the small egg. The wok has a 13" diameter and snuggles perfectly into the fire ring.
2 Use direct heat for stir fry. Get the temperature in the egg to 450F to 500F and heat the wok. The wok is ready for stir fry when water flicked onto the wok dances.
3 The stir fry takes a total of 5 to 7 minutes. Adjust your time to your taste.
4 Add the olive oil and red wine vinegar.
5 Add the vidalia onion and toss for approximately 30 seconds.
6 Add the peppers and toss for approximately 30 seconds.
7 Add the green beans and toss for approximately 30 seconds.
8 Add the crushed red pepper flakes.
9 Continue to toss until done.
    Special Instructions:
1 Play with the veggies mix. Use what you like. I'm sure the variations are endless. Enjoy.

    Susan,

Do you have any sesame oil? Five spice, scirracha and hoisin if you have it. Thai chili sauce works too.
