the sweet heat of Todd’s Robust sauce goes nice with the savory flavor of the gorgonzola & smokiness of the bacon. This tasted good
The hunk o’ meat (looks like someth'n Pat would eat raw :laugh: :laugh: :laugh: ):

To the egg, indirect, 350, with a little of JL’s Persimmon:
The Robust saucing (one of 3):

Larry, be careful not to poke them, the cheese will shoot out as if from a cannon (learned that the hard way), but tasty as hell, hour & a half total on the egg, real slow cooking, worth the waithappy in the hut

that was chuck, 5lbs, Sam's club, $12, great for burgers, nice amount of fat... & the gorgonzola is great in this, just have to let it cool a few minutes before biting into it or :evil: and the Carnivore sauce is perfect, great heat to that stuff, just great, especially with a little puddle of extra sauce for dippin on the plate happy in the hut
