I think I saw a posting on here that showed a formula for figuring out how many lbs. of raw Butts a person needed to cook to end up with a certain number of COOKED servings.Help anyone??? :unsure:

Others will chime in but my experience puts it around 60% product compared to bone-in raw butt weight. Also plan on 1/4 lb per person if salads are available and 1/3 lb if not.

2.4 servings per pound of uncooked butt. trick is to know your crowd and how many servings each will eatfukahwee maineyou can lead a fish to water but you can not make him drink it

Hoss is quite close. I got a 57% yield from 2 butts.
You just can't take 26 years in a biochemistry lab out of an old horse. :laugh: -

Divide the the number of guests by 2.4. There is also an excel spread sheet floating around to plan this.
Celtic Wolf has a nice write up also which comes out pretty close to the 2.4 formula above.
