Easy beef first cook?

I'm looking to maybe cook a slab of beef this weekend but there are a couple of problems.

1. The wife is working and I'll be watching the 7 month old most of the day by myself. I need to be able to put it on the grill and forget it.

2. I don't want to do a really long cook. 6 hours or under would probably be my max.

Any suggestions or should I wait until there are 2 people to help with baby care?

  • I would practice trying to regulate the temp a few times prior to cooking something for a long period of time. However, the egg is very easy to get regulated.

    I did a small beef brisket the other day and that did not take too long. About 1-1/2 per pound. Once you get your grill temp set, put on the meat and you should be ready to go. I would periodically check your temp reading though.

    Just my thoughts!

    Jack, you might not have enough time (6hrs) for even a brisket flat, sometimes they go long. Tri-tip (if available in your area) is a good size pcs of beef (2.5 to 3.5# avg.) and can be cooked relatively fast with good results.

    I'll have to talk to my butcher and see if he can do that. If not, I'll just go with some good steaks and save the slow for another time!

    I've done a couple of 2-3 hour cooks at about 300 but nothing longer. My temp regulation is adequate. Nothing more than that yet! :)

    Jack, easy first cook. 3-4lb roast(round) or (chuck) 1 cup beef broth Lipton dry soup mix, foil at 350 3.5hrs dinner!

    There really is no easy beef first (slow) cook. Go with steaks if it must be beef. I notice this is your first couple posts. If you are truly new to the egg, with the responsibilities of child care and all, I would strongly recommend (for an impressive, yet simple cook) do a Spatchcock chicken. They present beautifully, and are hard to mess up! Just my two cents!

    I have to agree with you LC, whole chicken is a great cook, only 1-2 hrs depending on temp and setup.

    I did a beer can chicken over the weekend and the wife informed me she's not a big fan of chicken since the baby came. Changing tastes. She gets tired of pork, so I thought about a possible beef. Looks like steaks. thanks guy!!
