nobu style cod , marinated for 2 days in sake sugar mirin and miso
japanese sweet potato sliced thin soaked in salted lemon water so it does not brown.. cooked in duck fat

have had the cod at nobu and made it a few times it is amazing . the sweet potato chips were perfect home fries had too much fat and i would pass on them nxt time .. but chips take lots of time for a week night

Nice, looks like good stuff. Reading the info about it.. say's it will make you relax and sleepy,... well I can believe it. Plum wine makes me sleepy also.
I got some cheap sake. Made right here in U.S.A. www.gekkeikan-sake.com I drink it outa little cast iron cups. A bottle of that, some sushi rolls and a Godzilla movie and I'm set. -
This is similar to what my Grandma does with Salmon. Except we let it sit for weeks or months. I'm not sure exactly how she does it...there must be a salt component.
It is one of the greatest tastes ever. Sweet, salty, and savory.
We put it in a cast iron pan and it burns from the sugar...oh does it burn. But then combined with the salt, sweet, and savory, it is perfect.
OK...I'm going fishing this weekend.

let me know if you need the recipe.. works better with cod filets as they are less likely to fall apart on the grill . summer i will grill a hunk of salmon on the mini with a teriyaki sauce and serve with the cold spinach and soba noodles [cold as well]

i think i used half a can of pam so they would not stick after the marinade for 2 days they are ready to fall apart. hope you get some good eats later today.

cook spinach allow to cool while draining and then squeeze out as much juice as you can and roll with a sushi mat top with sesame.. tradtionally the spinach has a little dashi added to it but my son does not like the flavor so these were plain. i like wiht a little sushi su [vinegar sprinkled on.]
if you want exact recipe e mail me and i will get out the cook books and send you exact..
also i have a silicone sushi mat that is a lot easier to use for this i will try to find the link -
