Dude, that looks AWESOME!! Not sure if you can get it where you are, but the only thing I can see as an improvement would be to use Texas Toast - thick sliced bread basically, grilled on a flattop.

Here's my version using a fried egg, slice of ham and slice of cheese. I call it Egg McMillin.
Might be a good breakfast at the Texas Eggfest.
