Quick and easy:
1 28oz can diced tomatoes
1 6 oz can tomato paste
1/2 cup finely chopped onion
2-3 cloves minced garlic
1 tbsp black pepper
1 tbsp dried basil
1 tbsp dried oregano
1 tsp crushed red pepper
1 tsp crushed fennel seed (optional)
2 tbsp olive oil
Sautee the onion and garlic in the olive oil. Once translucent add remaining ingredients. Simmer for a couple hours. I like to hit it with a stick blender at the end to get the final few chunks of tomato to break down.
Makes enough for 4 12" pizzas and freezes very well. -
i only use about a tablespoon and a half on a pizza, do you think i could get more than 4 pizzas out of a 28 ounce can of tomatoes  hey Fidel, did you do the math yet on the ww forum yetfukahwee maineyou can lead a fish to water but you can not make him drink it
-
You could probably get about 3 dozen pizzas that way!
I have the math done, but was holding out for more people to respond. I only have about half of the weights in.
I'll publish it in a bit - you had a good week I see -
those numbers wont look as good next monday, big two day ice fishing derby this weekend, slow lake means lots of food.

The De Fratelli sauce canned by Hirzel Canning Co. will rival some of the best home made sauces that I have ever tasted.

Lately I've been making a fresh sauce that is really good. In a food processor put three garlic cloves and 1/2 tsp of fennel seeds and process. Then add the tomatoes from a 28oz can of Italian style tomatoes, don't use the juice. Add some dried oregano, about 5 fresh torn basil leafs, salt, pepper, and a tsp of sugar. Process just enough to get the consistency you like. -RP

Hey Rod,
I've had this recipe for about 25 years and it's amazing how close it is to yours. It is a great pizza sauce.
Pizza Sauce
3 T. Olive Oil
1 cup Onions (diced)
1 T. Garlic (minced)
4 cups Plum Tomatoes or 28 oz. can Tomatoes (undrained)
1 6 oz. can Tomato Paste
1 T. dried Oregano
1 tsp. dried Basil
1 Bay Leaf
2 tsp. Sugar
1 T. Salt
Fresh ground Pepper to taste
Heat oil in a heavy 3-4 quart saucepan over moderate heat.
Add onions and sauté 7-8 minutes, stirring frequently.
Add the garlic and cook for another 1-2 minutes, stirring frequently.
Stir in the rest of ingredients.
Bring to a boil, reduce heat, and simmer, uncovered, stirring occasionally,
for about 1 hour (You may have to add some water if mixture is too thick).
Remove bay leaf.
Process the sauce in a food processor fitted with a metal blade.
Taste and season with salt and pepper as desired. -
This is a great Pizza Sauce...after you try this you will never cook sauce again!
Pizza Sauce Recipe
Do not cook the sauce.
The hot grill will cook the sauce perfectly.
1 can (28 oz) Di Fratelli tomato puree (Publix)
1/4 teaspoon freshly ground black pepper
1/2 teaspoon of salt
1 teaspoon of oregano
1 teaspoon dried basil or 2 tablespoons of fresh basil
1 tablespoon garlic powder
2 tablespoons red wine vinegar
1 tablespoon olive oil
Mix all ingredients together and use on your favorite pizza dough! -
I have found for great flavor...I used crushed toms in a can...
I season on the pizza with fresh herbs. That way I can adjust the taste for different toppings.
I also use pesto sauce. I make a roasted garlic sauce. A pineapple BBQ sauce works well with chicken. For the kids I will mix mustard and catsup and make a cheeseburger pizza.
I use Tandoori paste for another pizza. In a pinch spaghetti sauce works well. Roasted eggplant sauce. .... -
Now you've got me drooling, you going to make pizzas in OK? -RP
-
I use plain canned tomato sauce, S&W organic from Costco.
I season by using a dough "dressing" before spreading on the tomato sauce. Just 3-4 minced cloves of garlic, a few shakes of crushed red pepper flakes, a few grinds of pepper, and a little Penzey's pizza seasoning in a ramekin. Drizzle with a little olive oil (about 2 teaspoons to 1 Tablespoon). Microwave for 20-30 seconds until you hear the sizzle. Let cook. Smear on dough, sprinkle a pinch or two of kosher salt, then spread tomato sauce and top the pizza.
Tomorrow is Pizza Friday! Woo Hoo!!!Egging in Crossville, TN -
Man, I hate to even think what those letters in your handle stand for!!? :woohoo: :woohoo:

Yes it is, I have 3 doughs fermenting in the fridge for tomorrow night. -RP

I do the same thing but leave out the tomato sauce!!

Pizza Day for us too tomorrow.
I made your dough recipe from last week as one of my doughs, and another I am trying to incorporate some whole wheat flour and a little oil.
They were both mixed in my brand new KA Monster last night and are in the fridge working their magic right now. -
