Rub ribs with your favorite rub
Preheat BGE to 300 degrees with platesetter legs up & a drip pan
Put ribs on BGE bone side down and cook for 2 hours at 300 degrees (no peaking)
Take ribs off BGE and wrap in HD aluminum foil with melted butter, brown sugar & honey on both sides of the ribs..wrap tightly in foil
place the wrapped ribs back on the BGE for 1 hour to 1 1/2 hours meat side down at 300 degrees until the wrapped ribs fold like an accordion when you pick them up
Unwrap ribs (be careful of the juice) and put back on the BGE direct for 10 minutes with your favorite sauce...keep the BGE at 250-300 during the last part of direct cooking
you will want to slap yo mamma they will be soooo good...
oh yeah prep the ribs by pulling the membranes off the back of the rib -
...And do babybacks as they are easier to start with. Go to BJs or Costco and get 3 in a pack for about $21.

I disagree with Bob...St Louis style are meatier and easier to work and cheaper IMHO...if you cook them the way I mentioned above they will be delicious...of course I never turn down a baby back if you are offering... :cheer:
