I wanted to spice up the chicken breast tonight so I brought out the Cherry peppers and Jamaican Jerk sauce:
Using thick breasts, I cut a deep pocket. Mixed up some chopped broccoli, chopped sweet cherry peppers, cheddar and monterey jack cheeses along with the jerk sauce. Stuffed it in the pocket and used 4 toothpicks each breast. Seasoned the outside. Made one breast unstuffed for the picky eater, but he did want jerk seasoning on his:
Threw them on them mini
Came out great and Spicy!!!

Sorry for the duplicate picture - it was supposed to be a picture of the jerk seasoning I used.
Here it is - good stuff and authentic:

Faith,
Looks well worth a try to me! Thanks.
Jerk AND cherry peppers! You're a hottie!
That was cooked direct, I think.
About how long, if you don't mind?
Later,

Faith;
Those look awesome; great job!

Thanks.
Peter, it was direct - on the mini!! I don't have any indirect way to cook on it yet so I just throw everything on direct and it still comes out just great!!
Just so you know - I am an egger with a Large for the past 12 years and so I am not a freak about the "exact" times - It just needs to be cooked within the correct temperature range. All chicken cooked on the Egg is GREAT if not overcooked,so that is my goal.
I put the chicken on at about 390 dome and it really only took about 10 minutes per side, I left the stuffed ones in slightly longer than the unstuffed one. I would have cooked on a lower temp but that little mini just likes to get hot quick. If I was using the large, I would have stabilized at a lower temperature and cooked it longer.
Hope that helps and makes some sort of sense.
