chips are fine. wood is wood is wood is wood.
they don't burst into flame in the egg, so no need to soak.
i use chips, because i can put handfuls where i want. tried chunks before, but if the fire loses contact you end up with a bug chunk of wood sitting away from the fire. with chips, i can spread them up and down in the fire column and the fire always finds them.
i still use chunks, i just don't swear off chips, eithered egli avea del cul fatto trombetta -Dante -
If you want the wine flavor get cut up wine barrels. I know Steve Reichland sells them on his site. Also some other company does too, I cannot remember who, search amazon for wood chunks. But I thought about getting some old wine barrels to throw in when I do poultry or fish, or whatever
