until I am the proud owner of a new large egg!
When I hug my salesman tomorrow - Do you think it would be OK to hug him and lift him off the ground a couple inches while spinning him aournd 360 degrees or should I take it easy and just do a easy hug and pat him on his back a couple of times!
I think I learned that Chicken is little wood and beef is a good amount of wood! Chicken must hold the smoke in very easy and beef must talk longer to take it all in!
After my romantic spatchcock chicken tomorrow - I am going right for the ribs! Thanks Phil Hanna for a great video! Would slow cooking ribs (no soaking needed) need alot of chunks! Can you over smoke ribs!

Yes you can over smoke ribs. :S Two or three good size hunks and you should be good. Let the smoke clear and you still have some good tasting ribs.
What kind of wood? I like apple, pecan, hickory. They tell me guava is good, just haven't bought any yet. -

Two or three good chunks is what we use. Let all the thick white smoke die down. ( 1/2 hour to 1 ) Then your good to go. This is on a large (time wise). Apple is the wood of choice for most of our cooks.

I actually have a friend who owns an egg and another that owns a BBD (big drum smoker- rocky)- They both are awesome cooks and love smoking! These guys make their own bacon and sausage - so I guess they are alot like you guys!
Anyways - they have been rubbing off on me and I decided to purchase one - I started looking at gas smokers at Sears and almost bought one! Then I googled the egg! I over review anything I buy (if you ever buy something -let me know! I know alot about alot of crazy things)
and after reading hundreds of posts and reviews I came realize a few things:
- you will not read a bad review on an egg
- the only issue is the price
- cult following
- you can not find a used one anywhere - I can find a used lighbulb for sale online but not an egg!!!!!!
I own a grill = but I do not own 4 grills in different sizes - eggers do! end of story! -
I would be careful who I would kiss...
I thought I was excited when I got my eggs, man, you can be ranked as one of the most excited newbies.
Chicken, fruit wood is great. Cherry or apple are great. I also like grape vine and sometimes Jack Daniels barrel chips. The end result is nothing like what the chips smell like.
Watch the food temperature and you will do just fine.
For your first chicken cook stay with cherry or apple. I would guess you will have your egg by the time you get back to the forum.

Remember to let the Egg stabilize for a few minutes and let the smoke clear before putting the chicken on. My first mistake was not letting the temp stabilize and then once I put the chicken on I saw the temp drop and began adjusting vents. BIG MISTAKE on my part. After a few minutes the temp will come back to where it was or else you will be playing with the vents and chasing temps the entire time.
Second tip is when you put the daisy on make sure the screw on it is towards you or else the slider will close every time you open the dome.
Third tip -- if you looking you aint cooking. Try not to open the dome.
Foruth tip is too start saving up for that second egg. Begin takng leftover for lunch (if there are any) and secretly stash your lunch money for the second egg. Then the wife can't complain because now you are eating out less and saving money.
