All I'm really looking for here is a rub recommendation.

    Ahhhh, Pig Nuts? I like a quick soak in soy sauce (for the chestnuts, and no rub on the bacon. If you decide to use some make sure it has no salt in it. Maybe try some brown or maple sugar sprinkled on toward the end of the cook, or a dipping sauce.

  • Thanks Wayne. I did search a lot of recipes that called for soy unfortunately I can't stand the stuff. I have some time this afternoon to experiment though. I was planning on saucing too. Maybe (like a lot of things)simpler is better.
