Just got my egg a few weeks back and have been doing a lot of reading on here lately and a lot of phone calls to AL on here. Cooked two pork butts the night before and during the superbowl we crank up the egg and cooked the following:

Stuffed jalapenos. Stuffed with goat cheese, roasted corn, andouille sausage, topped with smoke gouda

Stuffed white mushrooms. Recipe as follows. Rinsed mushroom, removed cap. Drizzled white wine and olive oil over the caps. Added a pinch of grey sea salt in each cap. Stuffed with manchego and a smoke prosciutto. I usually prefer to stuff with chorizo but these came out good as well.

The shrooms especially look great. How long you smoke them?

not as long as i wanted. I saw peoples tongues hanging out once smells started flowing out of the egg. I did it for 15 minutes, i would have like to have let them on for 1/2 hour get a little more flavor.
As for the chorizo I usually buy Don Quixote brand of chorizo in the link that is about an 1" in diameter. Slice it about 1/2" thick and remove the skin.
