I have about half a flat left and I was going to have it for dinner tonight with the boss (aka wife). I planned to put her (flat not the wife) in the oven at like 225 for 30-40min. Is that cool? Any other suggestions?
thanks
tim

It could dry it out. Vac pack it after you add a little beef broth(double seal),and then put the bag in hot water until heated through. No moisture loss, and it'll taste as good as coming off the grill(almost  )HTH.
  • I slice mine and reheat in the m'wave. Plenty of juice, if you have it.

But my mom slices her previously-cooked and chilled smoked brisket thinly on a Krups slicer, and reheats in her own barbecue sauce (recipe similar to one in the NYT cookbook, tomato based with brown sugar and spices.) This is her signature Kansas City bbq, and her party dish. She still can crank that out at age 82 or so, amazing.
