Meat Loaf

Time for some comfort food tonight in the 864!
This recipe is from one of our favorite cookbooks by Lodge, "A Skillet Full". This was our first time trying this one and it was not disappointing but very tasty

June's Meat Loaf, page 99 by June Chance
3/4 lb ground beef
1/4 lb pork sausage (bought ground pork by mistake as it is what I usually get, just didn't read my list, oh well next time)
1 egg (used eggbeaters as always)
salt
pepper
3/4 cup canned tomatoes
1/2 cup crushed saltines
we added bacon, tomato sauce on top & some worchester sauce
350 for about an hour.
Actually used the oven for the potatoes (store brand scalloped) and the nuked green peas.

Looks great Rocky! That's an interesting meatloaf recipe. Will have to give it a try.

Got home a while ago from watching the Vols beat Vandy, always nice to beat them on their own court. Big fun.

It was really good even w/o the peppers/onions; probably would have been better if I'd bought the sausage instead of the ground pork. Got leftovers for lunch today so I'm ready for some more. -
