Wild Duck Quesadilla

Brined the wild duck breast in salt water for 12 hours, then let it sit in milk for 24 hours. Next, marinated in worchestershire, salt, pepper, garlic and evoo. Grilled to medium rare. Sliced thin then thrown on a cheesed up tortilla. Damn fine eating.

looks great. 2nd time I ever heard of rare duck. I was supposed to duck hunt this weekend in El Camp TX but guide was double booked.

It was a little more cooked by the time I ate it -- added another tortilla on top and threw is back in a skillet. My guess is, it was med rare plus by the time I ate it.

I am always looking for new recipes for duck (the freezer is full from a great season and just got back with MORE!) I had never even thought about a dilla', but I will now.
I used to use the milk trick on brackstrap before I became strictly a bird hunter - can you tell a differnce with the duck? I always just bleed the duck out in gold water oversight before marinating. Thanks!!
