I love Chimayo Chili. Picked up a bunch this past summer. Which type are you looking for a substitute for? I've got a store that will ship to you if you're interested.

, heck I didn't even know there was something called Chimayo Chile haha :laugh: , the thing is I can't find Chimayo Chile at home and am wondering which other chile can be used instead? Or the store contact info and I can have it shipped to a US address and have it brought home by a friend hehe

Chimayo chiles are a New Mexico dried red chile that are grown in the Chimayo area (according to my cookbooks). You could use another dried New Mexico chile it just won't be quite as fruity in flavor.Egging in Crossville, TN

Farmer Brother's Albuquerque Chile is a very good, all-round dried red. Toast it in a hot skillet a few minutes before adding liquid and you can get that smokey flavor. Add more (amount) to obtain more heat. Can buy in a very large container that keeps well in freezer. Very consistant in flavor. :cheer: -

Hey, Pwise, Mom lives near Chimayo, and I think the chili there is different than any other but...you can try Guajillo --it is about the same mildness, has some of the smokiness but a bit less of the sweetness. If I run out of Chimayo and not to bother Mom, I use Guajillo from the local Mexican store.
