Injecting Butts

I'm doing pulled pork for a New Years gathering. Will certainly stuff with garlic but was also thinking of injecting with a garlic/butter mix. Just wondering if anyone has tried injecting and their eggsperience with it. Thanks in advance for any comments.

  • I injected my last butt with some of my rub diluted in apple cider vinegar and water(was going to use apple cider but I forgot to buy it :whistle: ) It turned out really good. I should have paid attention to the ratio I probably can't duplicate it again.

    I've injected'em before with decent results. I don't do it any more as I simply appreciate the straight up taste of good PP too much. I say give it a shot, it's not going to make'em suck. Who knows? You might end up liking it better that way. 'Course you might could get just as good a result if not better by sprinkling the pork with the garlic butter mixture after you've got it pulled. Just a thought.

    I presume you mean before the cook. If so I would reccomend wrapping it in plastic wrap first. The few times I have tried that it sprayed back out (all over the kitchen) almost as fast as I was putting it in. Seems that the multiple muscles leave cracks or spaces for it to escape. Just a idea.

  • Yep, did that to me as well. You need to make many many injection sites. I probably only got a 1/4 of a cup to stay in a 10 lb butt.

    its much easier to do when the butt is in the plataue stage in the egg where your not caring much if it makes a mess. ive only injected vineger sauce.

  • Thanks guys. I haven't injected in the past and like the results. My friends I'm going to visit are Filipino and they like their garlic so I thought I would give it a try.
  • Pork butt is probably the easiest most forgiving cook you could do, slap some rub on it and throw it on the Egg 1.5 to 2 hrs a pound when its done you will be heralded as a GOD by friends and family. IMHO keep it simple.

    have you tried wdan's lechon asado with a pork butt, might be what your looking for with the garlic

  • I work with a Filipino woman and she loved my last pulled pork. I used a vinegar sauce on it and she said it was very similar to a dish that they make! So you are on the right track.
  • Haven't tried that one but have done Mojo Pork several times. It's not injected but is marinated overnight and there is a mojo dipping sauce that goes with it.

    That just looks toooooo good. I have to get to the store and get some butts for the weekend. Between you and Desert Oasis Woman, I can't take it anymore. So in your opinion butts are better than a shoulder?
  • I can't tell the difference Anne. They were on sale at my local grocery store for $0.95/lb. so that is what I volunteered to bring to our get together. Besides, they are so easy to cook. I bet Thirdeye will have an opinion on what is better bewteen a shoulder and a butt.
  • I'm actually putting on two butts later this morning and was going to try injecting them with 'Big Pig Pork Injection' from Dr. BBQ's book (to go along with his Big Time Rub). It consists of pineapple juice, apple juice, brown sugar, salt, worcestershire sauce, soy sauce, hot sauce and dry mustard. I've never done one before so I'll try to post back my results.
