:P Just wanted to thank ya'll for the great response's on the spatchcocked chicken and will let you know how it turned out after tonight!I am going to use the plate setter for the first time and see how that turns out! Spatchcock, I assume means to butterfly??? Also how do you enter a small enough picture to fit your profile??? Thanx Jeff

Technically, spatchcocking is different than butterflying. Spatchcocking is done to a chicken or other bird. It's a long story:

From the Washington Post:"To butterfly is to cut a single slit more or less through the middle of a usually boneless piece of meat, poultry, fish, even a vegetable, so it can be opened up in the manner of butterfly wings," she says. "It may be cooked flat or stuffed and reshaped.
