Ribs w/wo Membrane

There was a discussion in the last couple of days about someone trying to remove a membrane from the back of ribs that didn't exist.
I bought three racks from Wal-Mart this am and two of them had the membrane and one did not. One appeared to have been removed already. These were packaged by Tyson. I've never seen this occur.

I will bet they have been "Enhanced" too.
Walmart is the worse place to buy rib.. That Enhancement is a brining solution. Be real careful about putting any rub on it with salt in the rub.
As for the membrane my only guess is that the membrane had some kind of mark or damage that did not make it look appetizing.. It happens even in the ribs I buy from places like Costco, or butchers -
What do we look for to know if they were enhanced?
-
It says "Enhanced" on the package.
-
I'll go look!
-
enhanced or solution added, if they are repackaged under a grocerystore label you need to ask, they dont repackage with a label that says enhanced. hormel, tysen, some swift, usually are enhanced. most anything at walmarts are enhancedfukahwee maineyou can lead a fish to water but you can not make him drink it
-
"Enhanced" with a --% solution of water, salt, etc. Don't buy.! All the Hormel meats I've looked at tell the story... juiced up to bolster weight and shelf life! Ever wonder why it tastes like c==p? Good luck...
-
I'll be darned! "TENDERNESS AND MOISTNESS ENHANCED WITH UP TO 12 PERCENT SOLUTION"
So much for Tyson ribs. I'll have to remember to look for that enhanced statement.
I used up a portion of DP's Cow Lick Steak Rub I had left over and the rest with Dizzy Dust All Purpose. Any problems with that? -
I responded to that post a couple days back. I spoke to someone in the meat dept at Costco (Buford, Ga) and they told me that sometimes the membranes are removed by the distributor for certain restaurants. Some of these ribs prepared for those restaurants end up at Costco instead. I was quoted ~ 2% of the ribs you get at Costco have the membranes removed.
Wish I would have known that prior to spend about an hour cussing at my ribs and shredding up the bone side attempting to remove a non-existent membrane! -
How long did you let them sit before you started cooking them?
Cow lick on pork ribs.. now that is interesting
-
This calls for a smartass answer, but I don't like kick'n a man when he's down.. :woohoo:
-
I felt I was pushing it. After I rubbed them they probably sat for 45 minutes at the most.
-
Nothing to worry about then. They might be a little hammy, but not near as bad if you left them sitting for the recommended 2+ hours.
If you have a Costco/Sam's/BJ's membership get your ribs from them. They will not be Enhanced. -
Tell you what Chris, after reading that, I looked real close and still wasn't certain if my eyes were just old or if I was seeing the trueth. Thanks to you, I saved lots of time and turmoil.
-
Not sure I follow?
-
Yeah...my wife thought she was going to have to call the police. I shredded the crap out of those ribs. I would rather they leave it on...that was I know for sure if it is on there.
-
I think my meat market will be okay too. If I get them from Sam's I'll have to do better planning since one is not as close. I'm going to do more research and see if I can get them from my Randall's supermarket. I'll also call and ask the meat department.
CW, I certainly appreciate the information. I had no idea. -
Ok you forced me. It's all your fault..
Didn't the lack of that slick shiny surface give you a clue?? :woohoo:
It's your fault.. :woohoo:
 :cheer: -
I get my ribs at that same Costco, and I can tell you that I get about 20% of them with no membrane from that store.
Maybe I'm just lucky. -
That's good to know. Thanks, Pete.
-
Oh...now I get it. I see what you are saying, but even after you take off the membrane it still appears to have a membrane (albeit a much thinner membrane).
I just couldnt convince myself that it had already been removed...because I had never had that happen. I just kept saying to myself "damn, this is a really thin membrane."
Oh well...lesson learned. -
Thin as in Tuff!
