    MMMMM More cold weather chow! What was that stew you said I need to try? New Bronsic or some'en? (I've seen that wood before some where! :laugh: )

    Hey bill,

    I have yet to cook with a DO on the egg...how are you regulating temps? You don't use the lid, and you watch the dome thermo, right?

    I did a similar dish for the kids (and me, too!) tonight called Swiss Steak, which is essentially some chuck roast, broth, onions, potatoes, and some seasoning of onion soup mix, worcestershire sauce, and some yellow mustard and some garlic. My kids love it! I'd like to try it on the egg some time, because the house smells like the stew for a few days when I cook it.

  • dutch oven on the grid regular height direct no lid. smoke wood as needed. just watch dome temp can do simmer to rolling boil ,, do need to watch liquid every so often other wise an easy cook.. smell stays outside and the little bit of persimmon/hickory just add that special egg flavor.. red wine is a good add as well
    will be tomorrow nights dinner as well with some crusty bread and butter for dipping..

    I did a chili like that recently on the egg in a dutch oven and I liked it.

    One thing was that the flavor was slightly too smokey for my tastes. Could I reduce that by simply keeping a cover on askew? The wood was already kept to a minimum.

  • That looks delicious! I have a cast-iron dutch oven on my Christmas list... so hopefully I can try some stews and chili's on the BGE here soon! :woohoo:
