Stuffed Fritos - Wow

I have been putting off making these for no good reason. I finally got around to doing a few yesterday and I must say...HOLY CRAP these are good!!!! I'll be making a whole bunch more of these today. The only change was to use the Tostidos Scoops instead of Fritos. Frank, these are a real treat!

Appetizer, Stuffed Fritos & Mushrooms, AZRP
INGREDIENTS:
1 Lb Italian Sausage (casings removed)
1/2 Lb Cheddar Cheese (shredded)
1/2 Cup Marinara Sauce
Button Mushrooms
Frito Scoops
Sour Cream
Preparation :
1 Remove stems from the mushrooms and scrape out the gills and some of the flesh with a melon baller to allow more stuffing. Mix together the sausage, cheese and marinara sauce until thoroughly incorporated. Stuff the mushrooms or Frito Scoops with the mixture. Cook indirectly on a raised grid at 350°F. dome temp. until the meat reaches 170°F internal temp., about 20-30 minutes.
2 Put a dollop of sour cream on and serve.

Here is the one that I used. I think that it is from Frank in Houma;
Stuffed Fritos
1 lb 93% lean ground beef
1 cup shredded cheddar cheese
1 packet of taco seasoning
4 Tbs. of salsa
1/4 cup onions chopped fine
Mix the above together
Stuff Frito scoops
Cook indirect at 350 until they reach an internal temp of 150
Squeeze some sour cream and guacamole on the Stuffed Fritos after they come off the Egg
Hint: Fill a ziplock bag with the sour cream or guacamole and cut a small hole in the corner to use it as a squeeze bag.
Option: Cut up a couple jalapenos and mix in or top with jalapeno slices -
Terry I think Cory used Frank's version of stuffed Fritos, he took them south of the border. Here is the filling, I made these in Tempe yesterday. -RP
1 lb ground meat
1 packet taco seasoning
2 Cups shredded cheese

Mix meat, cheese, and seasonings and fill Fritos. Bake at 350 until filling reaches 160, about 20 minutes. -
That's the South of the Border Stuffed Fritos. Taco sauce works instead of salsa if you like - just to give it a little moisture. Glad you like em.
Original inspiration was from AZRP's italian stuffed fritos.
I have seen some folks trying it with Tostitos - I tried it that way but prefer the corn flavor from the Fritos instead of the flour flavor of Tostitos. Works with both - just a matter of personal preference. -

This may be a silly question, but do you brown the ground meat first, or just mix it all up raw?

Mix it up raw. That is why the 93% lean is best I think. Less grease during cooking.

Shame on you.You can't eat crispy chicken skin but what about all of that cheese?Behave your self.I know what your answer will be.Anything in moderation because you only ate one.
